{"id":7404,"date":"2009-12-04T13:08:03","date_gmt":"2009-12-04T11:08:03","guid":{"rendered":"https:\/\/www.churbayportillo.com\/blog\/?p=7404"},"modified":"2022-07-28T18:13:32","modified_gmt":"2022-07-28T16:13:32","slug":"marketing-lecciones-de-ferran-adria","status":"publish","type":"post","link":"https:\/\/www.churbayportillo.com\/blog\/2009\/12\/04\/marketing-lecciones-de-ferran-adria\/","title":{"rendered":"Marketing: lecciones de Ferran Adri\u00e0"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-7460\" title=\"Ferran Adri\u00e0\" src=\"https:\/\/www.churbayportillo.com\/blog\/wp-content\/uploads\/2009\/12\/Ferran-Adria.jpg\" alt=\"Ferran Adri\u00e0\" width=\"143\" height=\"159\" \/>En la Escuela de Negocios de Harvard quieren conocer el secreto de Ferran Adri\u00e0, un empresario que da m\u00e1s importancia a la creatividad que a los clientes.<\/p>\n<p>El profesor Michael Norton est\u00e1 interesado en los comportamientos aparentemente irracionales de los consumidores y cree haber encontrado en Adri\u00e0 el caso perfecto.<\/p>\n<p>Sus razones: el <em>misterioso<\/em> sistema de reserva del <a title=\"A Dios pongo por testigo por la voluntad\" href=\"https:\/\/www.churbayportillo.com\/blog\/2009\/02\/11\/a-dios-pongo-por-testigo-por-la-voluntad\/\">restaurante<\/a> de Adri\u00e0 -El Bulli- , que los afortunados que consiguen plaza deben viajar primero a Barcelona y luego conducir dos horas por caminos de monta\u00f1a, para pagar 230 euros por una comida que despierta sensaciones y emociones.<!--more--><\/p>\n<p><strong>Porque lo que ofrece Adri\u00e0 es m\u00e1s que una comida, es una nueva experiencia.<\/strong><\/p>\n<p>Si lo suyo fuera simplemente comida deber\u00eda irse a Madrid o Barcelona, piensa Norton.<\/p>\n<p>Mientras que Adri\u00e0 ha declarado recientemente que<\/p>\n<blockquote><p>una inversi\u00f3n de m\u00e1s de 450.000 euros para montar un restaurante en Barcelona a d\u00eda de hoy puede ser un <em>suicidio<\/em> econ\u00f3mico<\/p><\/blockquote>\n<p>De todos modos, Norton piensa que tener que ir hasta Cala Montjoi -donde est\u00e1 El Bulli- es parte fundamental de la experiencia.<\/p>\n<p>Norton tambi\u00e9n est\u00e1 sorprendido porque Adri\u00e0 piensa que si consultara a los consumidores sobre lo que quieren, pedir\u00edan algo que ya conocen.<\/p>\n<blockquote><p><span id=\"result_box\"><span style=\"background-color: #ffffff;\" title=\"&quot;If I like a good steak, you can serve that to me, and I'll enjoy it. But it will never be a once-in-a-lifetime experience. To create those experiences, you almost can't listen to the\">Si me gusta un buen bistec, me lo pueden servir y voy a disfrutarlo. Pero nunca ser\u00e1 la experiencia de mi vida. Para crear esas experiencias, casi no se puede escuchar la <\/span><span style=\"background-color: #ffffff;\" title=\"customer.&quot;\">cliente .<\/span><\/span><\/p><\/blockquote>\n<p><span><span style=\"background-color: #ffffff;\" title=\"customer.&quot;\"><strong>Y esta es precisamente la diferencia entre escuchar al consumidor y comprenderlo.<\/strong><\/span><\/span><\/p>\n<p><span><span style=\"background-color: #ffffff;\" title=\"customer.&quot;\">Por fin, Norton pidi\u00f3 a sus alumnos que estidiaran el funcionamiento de El Bulli y por supuesto encontraron que podr\u00edan recortar gastos: menos personal, ingredientes m\u00e1s baratos, etc.<\/span><\/span><\/p>\n<p><span><span style=\"background-color: #ffffff;\" title=\"customer.&quot;\">El problema es que si Adri\u00e0 hiciera esto, El Bullli ya no ser\u00eda El Bulli.<\/span><\/span><\/p>\n<p><span><span style=\"background-color: #ffffff;\" title=\"customer.&quot;\">La conclusi\u00f3n de Norton:<\/span><\/span><\/p>\n<blockquote><p>Adri\u00e0 dice que no escucha a los clientes, sin embargo, sus clientes son algunos de los m\u00e1s satisfechos en el mundo.<\/p><\/blockquote>\n<p>Fuentes: HBS Working Knowledge y La Vanguardia.
